Gaps alone don't act as demand supply zone but can be part of zones, except in one special case. I will share about gaps in a video soon.

It is making all time high's and I'm trying to buy pull backs to demand zones on the H1

You mentioned that gaps do not act as zones alone, so how would we trade these gaps? (marked in green)

Should we combine them with the candles right below the gap to draw a demand zone?

Yes, treat the gap itself as an invisible momentum candle, and mark the zones like this -

Real trading and prediction are extreme ends...Target points and Sl points are so important in success of trading system.. Day trading time period is very less so entry should be as early as possible.. Normal in Elliot's waves second wave is the biggest one. So we should catch it..
